Who knew Mexican food could be so vegan-friendly? With hearty dishes that include beans, corn, sweet potatoes, peppers, and salsa, there is plenty of festive flavor in these Vegan Mexican Recipes for any meal and even holidays like Cinco de Mayo.
My family loves Taco Night and don’t even get me started on my Vegan Nacho Cheese Sauce that we put on everything including pizza!
I absolutely LOVE Mexican food! It’s a great option for plant-based eaters when dining out because there are always delicious items on the menu like avocado tacos, veggie fajitas, and plenty of salsa options. It’s even better when you can make it in the comfort of your own home. Check out the full list of recipes at the bottom of the page.
Which Mexican foods are vegan?
Traditionally Mexican food has plenty of plant-based vegan options that include rice, beans, bell peppers, salsa, guacamole, and lots of vegetables–even cactus (Nopales). Yes, I’ve tried that too!
Some vegan-friendly ingredients that are commonly included in Mexican dishes are listed below.

Is it healthy?
Mexican food can indeed be made healthy, though often in restaurants it isn’t. Sometimes plates from the kitchen end up on the table dripping in grease, cheese, and sour cream and loaded with artery-clogging fat. However, with a little planning ahead, it doesn’t have to be that way.
When ordering out, I always ask the server to bring me something like vegetable fajitas–no cheese or sour cream and cooked without oil. It’s absolutely delicious and completely healthy.
Making Mexican food at home is even better because I have total control over what goes into each recipe. I love to make my Salsa and Stuffed Peppers, and there are plenty more ideas in the list of healthy Mexican food below. I even included my homemade Vegan Sour Cream.
